Ingredients

  • 2 cups Chickpea flour (besan)
  • 1 cup Ghee (clarified butter)
  • 1.5 cups Granulated sugar
  • 1 teaspoon Cardamom powder
  • 2 tablespoons Milk
  • 0.25 cups Chopped nuts (almonds, pistachios, or cashews)

Directions

Step 1

Heat a heavy-bottomed pan over medium heat and add the ghee to it.

Step 2

Once the ghee is melted, lower the heat and gradually add the chickpea flour (besan), stirring constantly to prevent lumps.

Step 3

Roast the chickpea flour in the ghee for about 15–20 minutes, stirring continuously, until the mixture turns golden brown and you sense a nutty aroma.

Step 4

Turn off the heat and allow the mixture to cool for 5 minutes.

Step 5

While the mixture is cooling, grind the sugar into a fine powder using a blender or food processor.

Step 6

Once the flour mixture is slightly warm, add the powdered sugar, cardamom powder, and milk. Mix thoroughly until everything is combined.

Step 7

Fold in the chopped nuts for added texture and flavor.

Step 8

Take small portions of the mixture in your hands and roll them into round balls (laddus). If the mixture is too dry, add a few more drops of milk to bind it together.

Step 9

Repeat the process until all the mixture is shaped into laddus.

Step 10

Store the laddus in an airtight container at room temperature. They can last up to a week.
