Ingredients

  • 6 cups pickling cucumbers
  • 1 large red bell pepper
  • 1 large green bell pepper

  • 0.25 cup kosher salt
  • 2.5 cups apple cider vinegar
  • 1.5 cups granulated sugar
  • 1.5 tablespoons yellow mustard seeds
  • 1 teaspoon celery seeds
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon crushed red pepper flakes

Directions

Step 1

Wash and trim the ends of the pickling cucumbers. Finely dice the cucumbers, red bell pepper, green bell pepper, and yellow onion into uniform small pieces.

Step 2

In a large mixing bowl, combine the diced cucumbers, peppers, and onion. Sprinkle the kosher salt over the mixture and stir to combine.

Step 3

Cover the bowl with plastic wrap and let the mixture sit at room temperature for 2 hours to draw out excess liquid.

Step 4

After 2 hours, pour the vegetable mixture into a colander and rinse thoroughly under cold running water to remove excess salt. Use your hands or the back of a spoon to press out as much liquid as possible.

In a large saucepan, combine the apple cider vinegar, granulated sugar, yellow mustard seeds, celery seeds, ground turmeric, and crushed red pepper flakes. Bring the mixture to a boil over medium heat, stirring occasionally until the sugar has dissolved.

Add the drained vegetable mixture to the saucepan and stir to combine. Reduce the heat to low and simmer the relish for 10 minutes, stirring occasionally.

Step 7

Carefully spoon the hot relish into sterilized glass jars, leaving 1/2 inch of headspace at the top. Wipe the jar rims clean and seal with lids.

Process the jars in a boiling water bath for 10 minutes to ensure proper preservation, or refrigerate if consuming within a few weeks.

Allow the relish to cool completely before storing. For best flavor, let it sit for at least 24 hours before serving.
