Ingredients

  • 8 oz rice noodles
  • 3 tbsp soy sauce
  • 3 tbsp hoisin sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 1 tsp red pepper flakes
  • 3 garlic cloves, minced
  • 1 tsp ginger, grated
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup snap peas
  • 3 green onions, sliced
  • 0.25 cup cilantro, chopped
  • 0.25 cup unsalted cashews, toasted
  • 1 lime, sliced into wedges
  • 3 cups water

Directions

Step 1

Bring 3 cups of water to a boil in a large pot. Remove the pot from heat, add the rice noodles, and let them soak for 8-10 minutes, or until tender. Drain and set aside.

Step 2

In a small bowl, whisk together the soy sauce, hoisin sauce, honey, sesame oil, and red pepper flakes to create the sweet hot sauce. Set aside.

Step 3

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of sesame oil and swirl to coat.

Step 4

Add the minced garlic and grated ginger, stirring frequently for 30 seconds until fragrant.

Step 5

Stir in the carrot, red bell pepper, and snap peas. Sauté for 4-5 minutes, or until the vegetables are tender-crisp.

Step 6

Add the cooked noodles to the skillet, tossing gently to combine with the vegetables.

Step 7

Pour the prepared sweet hot sauce over the noodles and toss well to evenly coat everything.

Step 8

Remove from heat and sprinkle the dish with sliced green onions, chopped cilantro, and toasted cashews.

Step 9

Serve immediately with lime wedges on the side for a burst of freshness.
