Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 medium bell peppers (red, orange, or yellow), diced
  • 1 medium jalapeño, finely chopped
  • 4 large garlic cloves, minced
  • 1 pound ground beef or turkey
  • 28 ounces canned diced tomatoes (with juices)
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 2 tablespoons tomato paste
  • 2 tablespoons brown sugar
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 1 whole lime, juiced and zested
  • 2 tablespoons fresh cilantro, chopped (optional)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and bell peppers. Sauté for 5-7 minutes until softened.

Step 3

Stir in the chopped jalapeño and minced garlic, cooking for another 1-2 minutes until fragrant.

Step 4

Add the ground beef or turkey to the pot. Break it apart with a spoon and cook until browned, about 8-10 minutes. Drain any excess fat if necessary.

Step 5

Stir in the diced tomatoes, kidney beans, black beans, and tomato paste. Mix well to combine.

Step 6

Add the brown sugar, chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Stir to evenly distribute the seasonings.

Step 7

Bring the mixture to a simmer over medium heat. Lower the heat, cover, and let cook for 30-35 minutes, stirring occasionally to prevent sticking.

Step 8

After cooking, stir in the lime juice and zest to brighten the flavors.

Step 9

Adjust seasoning to taste and garnish with fresh cilantro, if desired.

Step 10

Serve hot with your favorite toppings (shredded cheese, sour cream, diced avocado, or tortilla chips) and enjoy!
