Ingredients

  • 1 cup green mung beans
  • 6 cups water
  • 1 cup rock sugar (or granulated sugar)
  • 2 pieces pandan leaves (optional, tied into a knot)
  • 0.25 cup coconut milk (optional, for topping)

Directions

Step 1

Rinse the green mung beans thoroughly under cold water and remove any debris or damaged beans.

Step 2

In a large pot, combine the green mung beans and water. If using pandan leaves, add them to the pot.

Step 3

Bring the pot to a boil over medium-high heat, then reduce the heat to low. Let the mung beans simmer for about 30–35 minutes, or until they are soft and begin to break apart.

Step 4

Stir in the rock sugar (or granulated sugar) and continue to cook for another 5–10 minutes, or until the sugar is completely dissolved. Adjust the sweetness to taste.

Step 5

If you desire a more refined texture, you can blend a portion of the soup with an immersion blender, then mix it back into the pot.

Step 6

Remove the pandan leaves (if used) and discard them.

Step 7

Serve the mung bean soup hot or chilled, based on your preference. Optionally, drizzle a small amount of coconut milk over each serving for added richness.
