Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 1 teaspoons ground cinnamon
  • 0.75 cups granulated sugar
  • 0.25 cups brown sugar, packed
  • 1 cups canned crushed pineapple (including juice)
  • 0.5 cups unsalted butter, melted and cooled
  • 1 teaspoons vanilla extract
  • 2 large eggs
  • 0.25 cups whole milk

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a standard 12-cup muffin tin with paper liners or grease them lightly with cooking spray.

Step 2

In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, granulated sugar, and brown sugar until well combined.

Step 3

In a medium bowl, mix the crushed pineapple (with its juice), melted butter, vanilla extract, eggs, and milk until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and gently fold together using a spatula. Be careful not to overmix; the batter should still have some lumps.

Step 5

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Step 6

Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 7

Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 8

Serve the muffins warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days.
