Ingredients

  • 250 g Raw prawns (peeled and deveined)
  • 2 tsp Fresh ginger (grated)
  • 2 tbsp Soy sauce
  • 1 tbsp Honey
  • 8 Rice paper wrappers
  • 1 medium Carrot (julienned)
  • 1 medium Cucumber (julienned)
  • 12 leaves Fresh mint leaves
  • 8 leaves Lettuce leaves (soft varieties like butterhead)
  • 4 tbsp Sweet chili sauce (for dipping)
  • 1 tbsp Vegetable oil

Directions

Step 1

In a small bowl, mix the grated ginger, soy sauce, and honey to create a marinade.

Step 2

Add the raw prawns to the marinade, ensuring they are fully coated, and let them marinate for 10 minutes.

Step 3

Heat the vegetable oil in a non-stick pan over medium heat. Add the marinated prawns and cook for 2-3 minutes on each side, or until pink and fully cooked. Set aside to cool slightly.

Step 4

Prepare a clean work surface and a shallow dish of warm water for the rice paper wrappers.

Step 5

Dip one rice paper wrapper into the warm water for a few seconds until soft and pliable (do not soak too long to prevent tearing), then lay it flat on the work surface.
