Ingredients

  • 1 head (medium) Green cabbage
  • 2 large Carrots
  • 1 medium Green bell pepper
  • 1 cup Sugar
  • 1 cup White vinegar
  • 0.5 cup Water
  • 0.5 cup Vegetable oil
  • 1 teaspoon Salt
  • 1 teaspoon Celery seeds
  • 1 teaspoon Mustard seeds

Directions

Step 1

Start by preparing the vegetables. Remove the core from the cabbage and finely shred it into thin strips. Peel and grate the carrots. Remove the seeds and stem from the bell pepper and cut it into small, thin strips. Place the prepared vegetables in a large mixing bowl.

Step 2

In a medium saucepan, combine the sugar, white vinegar, water, vegetable oil, salt, celery seeds, and mustard seeds. Stir until the sugar dissolves.

Step 3

Set the saucepan over medium heat and bring the mixture to a gentle boil. Let it simmer for 2-3 minutes, stirring occasionally, then remove it from the heat.

Step 4

Allow the vinegar mixture to cool slightly for about 5 minutes, then pour it over the cabbage, carrots, and bell pepper in the mixing bowl. Toss the vegetables well to ensure they are evenly coated with the dressing.

Step 5

Cover the bowl and refrigerate the slaw for at least 4 hours or overnight to allow the flavors to meld. For freezer storage, transfer the slaw into airtight freezer-safe containers or heavy-duty freezer bags, leaving a little room for expansion.

Step 6

Freeze the slaw for up to 3 months. When ready to serve, thaw the slaw in the refrigerator overnight. Drain excess liquid if desired and serve cold as a side dish for barbecues, sandwiches, or grilled meats.
