Ingredients

  • 3 pieces Large eggs
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Unsalted butter
  • 1 cup Fresh raspberries
  • 1 tablespoon Powdered sugar (for dusting)
  • 0.5 cup Whipped cream (optional)

Directions

Step 1

Separate the egg whites and yolks into two separate bowls.

Step 2

In the bowl with the yolks, whisk together the egg yolks, 1 tablespoon of the granulated sugar, and vanilla extract until pale and slightly thickened.

Step 3

Using a hand or stand mixer, beat the egg whites on medium-high speed. Gradually add the remaining 1 tablespoon of granulated sugar and continue beating until stiff peaks form.

Step 4

Gently fold the whipped egg whites into the yolk mixture in 2-3 additions, being careful not to deflate the mixture.

Step 5

Heat a nonstick skillet over medium-low heat and add the butter. Swirl to coat the pan as the butter melts.

Step 6

Once the butter is melted and slightly foamy, pour the egg mixture into the skillet, gently spreading it into an even layer with a spatula.

Step 7

Cover the skillet with a lid and cook for about 3-4 minutes, or until the omelet is puffed and the bottom is golden and set.

Step 8

Using a spatula, carefully fold the omelet in half. Cook for another 30 seconds to 1 minute if needed to finish setting the inside.

Step 9

Slide the omelet onto a plate and garnish with fresh raspberries, a dusting of powdered sugar, and a dollop of whipped cream if desired.

Step 10

Serve immediately and enjoy!
