Ingredients

  • 14 oz canned salmon
  • 1 cup panko breadcrumbs
  • 1 tbsp all-purpose flour
  • 1 unit large egg
  • 0.5 unit yellow onion, finely diced
  • 2 stalks green onion, chopped
  • 2 tbsp parsley, chopped
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tsp Dijon mustard
  • 1 tsp sugar
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup cooking oil (vegetable or canola)

Directions

Step 1

Drain the canned salmon and remove any large bones or skin. Flake the salmon into a medium mixing bowl.

Step 2

Add the panko breadcrumbs, flour, and egg to the bowl with the salmon. Mix well to bind the ingredients together.

Step 3

Stir in the diced yellow onion, green onion, and chopped parsley for a fresh, aromatic flavor.

Step 4

Add the lemon juice, Dijon mustard, sugar, paprika, salt, and black pepper. Thoroughly combine the mixture until evenly seasoned.

Step 5

Using your hands, shape the mixture into 8 equal-sized patties, about 2 inches in diameter and ½ inch thick.

Step 6

In a large skillet, heat the cooking oil over medium heat until shimmering but not smoking.

Step 7

Carefully place the salmon patties in the skillet, being sure not to overcrowd. Cook in batches if necessary.

Step 8

Fry the patties for 3–4 minutes on each side, or until golden-brown and crisp.

Step 9

Remove the croquettes from the skillet and place them on a plate lined with paper towels to drain excess oil.

Step 10

Serve hot with your choice of dipping sauce, a squeeze of fresh lemon, or as a part of a larger meal with salad or rice.
