Ingredients

  • 1 large English cucumber
  • 1 cup Greek yogurt
  • 2 tablespoons Mayonnaise
  • 1 tablespoon Honey
  • 2 teaspoons Curry powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Fresh dill
  • 8 slices Whole wheat or white sandwich bread
  • 2 tablespoons Butter

Directions

Step 1

Wash the English cucumber thoroughly. Using a mandoline slicer or sharp knife, slice the cucumber thinly into rounds.

Step 2

In a medium-sized mixing bowl, combine the Greek yogurt, mayonnaise, honey, curry powder, salt, black pepper, and fresh dill (chopped finely). Mix well to create the dressing.

Step 3

Add the sliced cucumber to the bowl with the dressing and gently toss to coat all slices evenly. Set aside for 5 minutes to allow the flavors to meld.

Step 4

Lightly butter each slice of bread on one side to prevent the cucumber salad from making the bread soggy.

Step 5

Lay four slices of bread, buttered side facing up, on a clean surface. Spread an even layer of the cucumber salad mixture on top of each slice.

Step 6

Top with the remaining four slices of bread, buttered side facing the cucumber salad, to form sandwiches.

Step 7

Using a sharp knife, trim the crusts off the sandwiches (optional) and slice each sandwich into halves or quarters, depending on your preference.

Step 8

Serve immediately, or cover with a slightly damp paper towel and refrigerate for up to 4 hours before serving.
