Ingredients

  • 200 grams Couscous
  • 250 milliliters Whole milk
  • 150 milliliters Water
  • 30 grams Butter
  • 2 tablespoons Honey
  • 0.5 teaspoons Ground cinnamon
  • 1 teaspoons Vanilla extract
  • 3 tablespoons Sugar
  • 3 units Egg yolks
  • 1 tablespoons Cornstarch
  • 2 tablespoons Almond slices (optional)
  • 2 tablespoons Raisins (optional)

Directions

Step 1

In a medium saucepan, combine 150 milliliters of water and 50 milliliters of the whole milk. Heat the mixture over medium heat until it just starts to simmer.

Step 2

Remove the pan from the heat and stir in the butter, honey, and vanilla extract. Mix until the butter is melted and fully combined.

Step 3

Add the couscous to the saucepan, cover with a lid, and allow it to sit for 5-7 minutes until the liquid is absorbed.

Step 4

Fluff the couscous with a fork and stir in the ground cinnamon. Set aside and keep warm.

Step 5

In a separate saucepan, prepare the custard. Whisk together the egg yolks, sugar, and cornstarch in a bowl until smooth and pale.

Step 6

Heat the remaining 200 milliliters of milk over medium heat until it is warm but not boiling. Gradually whisk the warm milk into the egg yolk mixture to temper the eggs.

Step 7

Pour the milk and egg mixture back into the saucepan and cook over low heat, stirring constantly, until the custard thickens. This should take about 5 minutes. Remove from heat immediately once thickened.

Step 8

To serve, divide the sweet couscous among four bowls or plates. Pour the warm custard generously over the couscous.

Step 9

Garnish with almond slices and raisins for extra texture and flavor, if desired. Serve warm or at room temperature.
