Ingredients

  • 200 grams Chicken breast
  • 1.5 cups Sweet corn kernels
  • 4 cups Chicken stock
  • 2 cups Water
  • 1 large Egg
  • 2 tablespoons Cornstarch
  • 1 teaspoon Ginger
  • 1 clove Garlic
  • 1.5 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon White pepper
  • 2 stalks Green onion
  • 1 teaspoon Cooking oil

Directions

Step 1

Dice the chicken breast into small bite-sized pieces.

Step 2

Peel and finely mince the ginger and garlic.

Step 3

Heat 1 teaspoon of cooking oil in a large pot over medium heat. Add the ginger and garlic and sauté for 1-2 minutes until fragrant.

Step 4

Add the diced chicken pieces to the pot and stir-fry for 3 minutes, or until the chicken turns opaque.

Step 5

Pour in the chicken stock and water, then bring to a boil.

Step 6

Once boiling, add the sweet corn kernels and reduce to a simmer. Let the soup cook for 10 minutes.

Step 7

Meanwhile, in a small bowl, whisk together 2 tablespoons of cornstarch with 3 tablespoons of cold water to create a slurry.

Step 8

Slowly pour the cornstarch slurry into the soup while stirring continuously to thicken the broth.

Step 9

Beat the egg in a separate bowl. Lower the heat and slowly drizzle the beaten egg into the soup while stirring gently to create egg ribbons.

Step 10

Add soy sauce, sesame oil, salt, and white pepper to season the soup. Adjust to taste if necessary.

Step 11

Finely chop the green onion and add it to the soup just before serving.

Step 12

Serve the soup hot, garnished with additional green onion if desired.
