Ingredients

  • 8 pieces Red chilies
  • 3 pieces Garlic cloves
  • 120 grams White granulated sugar
  • 100 milliliters White vinegar
  • 100 milliliters Water
  • 1 teaspoon Salt
  • 2 teaspoons Cornstarch
  • 2 tablespoons Cold water

Directions

Step 1

1. Remove the stems from the red chilies. For a milder sauce, remove the seeds; for a spicier kick, keep them in.

Step 2

2. Add the chilies and garlic cloves to a food processor and pulse until finely chopped.

Step 3

3. In a medium saucepan, combine the chopped chilies and garlic, sugar, vinegar, water, and salt. Stir the mixture over medium heat until the sugar is completely dissolved.

Step 4

4. Bring the mixture to a gentle boil, then reduce the heat to low and simmer for 10 minutes to allow the flavors to meld together.

Step 5

5. In a small bowl, mix the cornstarch with the cold water to create a slurry.

Step 6

6. Slowly pour the cornstarch slurry into the saucepan, stirring continuously to prevent lumps.

Step 7

7. Cook the sauce for an additional 2–3 minutes until it thickens to your desired consistency.

Step 8

8. Remove the saucepan from the heat and allow the sauce to cool to room temperature.

Step 9

9. Transfer the sweet chilli sauce to a clean glass jar or bottle and store in the refrigerator for up to 2 weeks.

Step 10

10. Serve as a dip, marinade, or as an addition to your favorite dishes.
