Preheat your oven to 200°C (390°F).
In a small bowl, whisk together the sweet chilli sauce, soy sauce, lime juice, grated ginger, and minced garlic to create the sauce.
Lay out the parchment paper or aluminum foil sheets on a flat surface. Lightly brush the center of each sheet with olive oil to prevent sticking.
Place one fish fillet in the center of each sheet, and season both sides lightly with salt and black pepper.
Pour 2 tablespoons of the sweet chilli sauce mixture over each fillet, spreading it evenly with the back of a spoon to coat the fish.
