Ingredients

  • 4 pieces (about 6 oz each) Salmon fillets
  • 0.5 cup Sweet chili sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Honey
  • 2 pieces Garlic cloves, minced
  • 1 teaspoon Ginger, minced
  • 1 piece Red bell pepper, sliced
  • 1 piece Yellow bell pepper, sliced
  • 1 piece Green bell pepper, sliced
  • 14 oz Udon noodles
  • 2 tablespoons Sesame oil
  • 2 pieces Green onions, chopped
  • 1 tablespoon Sesame seeds
  • 2 tablespoons Vegetable oil (for cooking)
  • 4 pieces Lime wedges (for serving)
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.

Step 2

In a small bowl, mix the sweet chili sauce, soy sauce, honey, minced garlic, and ginger to create the glaze.

Step 3

Place the salmon fillets on the prepared baking sheet and brush each with the sweet chili glaze. Reserve a portion of the glaze for later.

Step 4

Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Step 5

While the salmon is baking, prepare the udon noodles according to the package instructions. Drain and set aside.

Step 6

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced red, yellow, and green bell peppers, and sauté for 3-4 minutes until they are tender but still crisp.

Step 7

Push the peppers to the side of the skillet and add the cooked udon noodles to the center. Drizzle sesame oil over the noodles and toss them with the peppers to combine.

Step 8

Pour the reserved sweet chili glaze into the skillet and stir to coat the noodles and peppers evenly. Cook for an additional 2 minutes to warm through.

Step 9

Remove the salmon from the oven and let it rest for 2 minutes. Carefully transfer the salmon fillets onto the noodle and pepper mixture.

Step 10

Garnish the dish with chopped green onions and sesame seeds. Serve immediately with lime wedges on the side for an extra burst of flavor.
