Ingredients

  • 500 grams Boneless, skinless chicken thighs
  • 120 milliliters Sweet chili sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • 2 cloves Garlic
  • 2 teaspoons Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Vegetable oil
  • 200 grams Jasmine rice
  • 360 milliliters Water (for rice)
  • 2 stalks Green onions (for garnish)
  • 1 tablespoon Sesame seeds (optional, for garnish)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Rinse the jasmine rice in cold water until the water runs clear. Combine the rice and 360 ml of water in a pot. Cover with a lid and cook over medium heat until the water is absorbed (about 12-15 minutes). Remove from heat and let it rest, covered, for 10 minutes.

Step 2

While the rice cooks, slice the chicken thighs into bite-sized pieces. Season with salt and black pepper.

Step 3

In a small bowl, mix the cornstarch and 2 tablespoons of water to create a slurry. Set aside.

Step 4

Heat 2 tablespoons of vegetable oil in a large pan or wok over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the pan and set aside.

In the same pan, add 1 tablespoon of sesame oil and minced garlic. Sauté for 1 minute until fragrant.
