Ingredients

  • 1 pound carrots
  • 2 tablespoons unsalted butter
  • 3 tablespoons brown sugar
  • 2 tablespoons honey
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons salt
  • 1 cup water
  • 1 tablespoon fresh parsley (optional, for garnish)

Directions

Step 1

Peel the carrots and slice them into evenly sized rounds about 1/4-inch thick. Alternatively, you can use baby carrots.

Step 2

In a large saucepan or skillet, add the water and bring it to a boil over medium-high heat.

Step 3

Add the sliced carrots to the boiling water, reduce the heat to medium, and simmer for 7-10 minutes or until the carrots are tender. Drain any excess water and set the carrots aside in the pan.

Step 4

In the same pan over low heat, add the butter and allow it to melt.

Step 5

Stir in the brown sugar, honey, ground cinnamon, and salt, mixing until the ingredients are fully combined and form a smooth glaze.

Step 6

Return the cooked carrots to the pan and toss them gently to coat with the glaze. Cook for an additional 3-5 minutes, stirring occasionally, to allow the carrots to absorb the glaze and caramelize slightly.

Step 7

Transfer the sweet carrots to a serving bowl and, if desired, garnish with freshly chopped parsley before serving.
