Ingredients

  • 2 pounds carrots
  • 0.5 cup unsalted butter
  • 0.5 cup granulated sugar
  • 0.25 cup brown sugar
  • 0.25 cup heavy cream
  • 3 tablespoons all-purpose flour
  • 3 eggs
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 2 tablespoons powdered sugar (optional, for serving)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish lightly with butter or non-stick spray.

Step 2

Peel and chop the carrots into uniform pieces. Steam or boil the carrots in a pot of water until very tender, about 15-20 minutes. Drain well and allow to cool slightly.

Step 3

Transfer the cooked carrots to a large mixing bowl or a food processor. Blend or mash until smooth and free of lumps.

Step 4

Add the unsalted butter, granulated sugar, and brown sugar to the carrot puree. Mix until the sugars are dissolved and the mixture is creamy.

Step 5

Stir in the heavy cream, flour, eggs (one at a time), vanilla extract, ground cinnamon, and salt. Whisk or blend until fully incorporated and the batter is smooth.

Step 6

Pour the batter into the prepared baking dish and smooth the surface with a spatula.

Step 7

Bake in the preheated oven for 50-60 minutes, or until the souffle is set and lightly golden on top. A toothpick inserted into the center should come out clean.

Step 8

Remove from the oven and let the souffle cool for 5-10 minutes before serving. Dust with powdered sugar, if desired, for a decorative finish.

Step 9

Serve warm and enjoy your Sweet Carrot Souffle!
