Ingredients

  • 500 grams carrots
  • 2 large oranges
  • 1 large lemon
  • 400 grams sugar
  • 500 ml water
  • 1 teaspoon vanilla extract (optional)

Directions

Step 1

Peel the carrots and grate them using a fine grater. Set the grated carrots aside.

Step 2

Wash the oranges and lemon thoroughly. Zest the oranges and lemon, then juice all the fruits. Reserve the zest and juice separately.

Step 3

In a large saucepan, combine the grated carrots, orange juice, lemon juice, and water. Bring the mixture to a boil over medium heat.

Step 4

Reduce the heat to low and simmer the mixture for 20 minutes, stirring occasionally, until the carrots are soft and the liquid is slightly reduced.

Step 5

Add the sugar, orange zest, and lemon zest to the saucepan. Stir well to dissolve the sugar completely.

Step 6

Continue to cook the mixture over medium-low heat for another 30-40 minutes, stirring frequently, until it thickens and reaches a jam-like consistency.

Step 7

If using vanilla extract, stir it in during the last 5 minutes of cooking for added flavor.

To test if the marmalade is ready, place a small amount onto a chilled plate. Allow it to cool for a minute, then run your finger through it. If it holds its shape, it’s ready. If not, continue cooking for a few more minutes and test again.
