Peel the carrots and grate them using a fine grater. Set the grated carrots aside.
Wash the oranges and lemon thoroughly. Zest the oranges and lemon, then juice all the fruits. Reserve the zest and juice separately.
In a large saucepan, combine the grated carrots, orange juice, lemon juice, and water. Bring the mixture to a boil over medium heat.
Reduce the heat to low and simmer the mixture for 20 minutes, stirring occasionally, until the carrots are soft and the liquid is slightly reduced.
Add the sugar, orange zest, and lemon zest to the saucepan. Stir well to dissolve the sugar completely.
