Ingredients

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon unflavored gelatin
  • 2 tablespoons cold water
  • 0.5 cup fresh berries (for garnish)
  • 1 tablespoon mint leaves (optional, for garnish)

Directions

Step 1

In a blender or food processor, puree 2 cups of fresh mixed berries until smooth.

Step 2

Push the berry puree through a fine mesh sieve into a bowl to remove seeds. You should have about 1 cup of seedless puree.

Step 3

In a small saucepan over medium heat, combine the berry puree, granulated sugar, and lemon juice. Heat gently, stirring until the sugar dissolves, about 2-3 minutes. Remove from heat and let cool slightly.

Step 4

In a small bowl, sprinkle the unflavored gelatin over 2 tablespoons of cold water. Let it sit for 5 minutes to bloom.
