Ingredients

  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 1 large Green bell pepper
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves, minced
  • 1 small Red onion, thinly sliced
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Wash the bell peppers thoroughly under cold running water. Remove the stems, seeds, and membranes. Slice them into thin strips about 1/4-inch wide.

Step 2

Peel the red onion and cut it into thin slices.

Step 3

Heat the olive oil in a large skillet over medium heat.

Step 4

Once the oil is hot, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

Step 5

Add the sliced red onion to the skillet and cook for 2-3 minutes, stirring occasionally, until softened.

Step 6

Add the sliced bell peppers to the skillet and stir to combine with the onions and garlic.

Step 7

Sprinkle the salt and black pepper over the vegetables. Stir well to evenly distribute the seasoning.

Step 8

Sauté the bell peppers and onions for 8-10 minutes, stirring occasionally, until the peppers are tender but still slightly crisp. Lower the heat if needed to prevent burning.

Step 9

Once the peppers are cooked to your liking, remove the skillet from the heat.

Step 10

If desired, garnish with freshly chopped parsley before serving for a burst of color and flavor.

Step 11

Serve warm as a side dish or use as a topping for grilled meats, sandwiches, or pasta.
