Ingredients

  • 2 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar (packed)
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter (melted and slightly cooled)
  • 0.5 cup milk
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1.5 cups apples (peeled, cored, and finely diced)
  • 0.5 cup optional: chopped walnuts or pecans

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, ginger, and salt until well combined.

Step 3

In a separate bowl, whisk together the melted butter, milk, vanilla extract, and eggs until smooth.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients and stir gently until just combined. Do not overmix; it's fine if there are a few lumps.

Step 5

Fold in the diced apples and nuts (if using) with a spatula until evenly distributed, being careful not to overmix.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
