Ingredients

  • 500 grams green cherry tomatoes
  • 250 ml water
  • 250 ml white vinegar
  • 100 grams white sugar
  • 2 teaspoons salt
  • 4 whole garlic cloves
  • 1 teaspoon red pepper flakes
  • 1 teaspoon mustard seeds
  • 1 teaspoon whole black peppercorns
  • 3 whole dill sprigs

Directions

Step 1

Wash the green cherry tomatoes thoroughly and remove any stems. If the tomatoes are large, pierce each one with a fork to allow the brine to penetrate more easily.

Step 2

In a medium saucepan, combine the water, white vinegar, sugar, and salt. Heat over medium heat, stirring occasionally, until the sugar and salt dissolve completely. Remove from heat and let the brine cool slightly.

Step 3

Prepare a clean glass jar (approximately 1-liter capacity) with an airtight lid. Sterilize it by washing in hot soapy water and rinsing well.

Step 4

Place the garlic cloves, red pepper flakes, mustard seeds, black peppercorns, and dill sprigs at the bottom of the jar.

Fill the jar with the prepared green cherry tomatoes, packing them tightly but without crushing them.

Carefully pour the slightly cooled brine over the tomatoes, ensuring all the tomatoes are submerged. Leave about 1cm of headspace at the top of the jar.

Seal the jar with the lid and let it cool to room temperature before transferring to the refrigerator.
