Ingredients

  • 4 pounds Beef short ribs
  • 1 teaspoon Salt
  • 1 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 4 Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 0.33333 cup Soy sauce
  • 0.25 cup Hoisin sauce
  • 0.25 cup Honey
  • 2 tablespoons Rice vinegar
  • 1 teaspoon Crushed red pepper flakes
  • 2 cups Beef broth
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 Green onions, sliced
  • 1 tablespoon Sesame seeds

Directions

Step 1

Season the beef short ribs with salt and pepper on all sides.

Step 2

Heat the olive oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat. Sear the short ribs on all sides until browned, about 2-3 minutes per side. Remove the ribs and set them aside.

Step 3

In the same skillet, add the diced onion and cook for 4-5 minutes until softened. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

Step 4

Reduce heat to medium and stir in the soy sauce, hoisin sauce, honey, rice vinegar, and crushed red pepper flakes. Let the mixture simmer for 2-3 minutes.

Step 5

Return the short ribs to the skillet and pour in the beef broth until the ribs are mostly submerged.

Step 6

Bring the mixture to a gentle simmer, cover, and reduce the heat to low. Cook for 2 1/2 to 3 hours, checking occasionally and turning the ribs every hour to ensure even cooking. The ribs should be fork-tender when done.

Step 7

Once the ribs are cooked, remove them from the skillet and cover them with foil to keep warm.

Step 8

In a small bowl, mix the cornstarch with water to create a slurry. Stir the slurry into the sauce in the skillet and cook over medium heat for 3-5 minutes until the sauce has thickened.

Step 9

Return the short ribs to the skillet, spooning the sauce over them to coat evenly.

Step 10

Garnish with sliced green onions and sesame seeds before serving.

Step 11

Serve the sweet and spicy short ribs with steamed rice or creamy mashed potatoes for a complete meal!
