Ingredients

  • 12 pieces large sea scallops
  • 4 heads baby bok choy
  • 2 tablespoons honey
  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar
  • 2 pieces garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sesame seeds (optional, for garnish)
  • 2 pieces green onions, sliced (optional, for garnish)

Directions

Step 1

Pat the scallops dry with paper towels and season both sides with salt and black pepper.

Step 2

Trim the bottoms of the bok choy and rinse well under cold water to remove any dirt. Slice each head lengthwise into halves.

Step 3

In a small bowl, whisk together honey, soy sauce, sriracha, rice vinegar, minced garlic, and grated ginger to make the sauce. Set aside.

Step 4

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. When the oil is shimmering, add the scallops in a single layer, making sure not to overcrowd the pan. Sear the scallops for 2-3 minutes on each side until golden brown and opaque in the center. Remove the scallops from the skillet and set aside.
