  • 4 pieces Chicken thighs (boneless, skinless)
  • 2 medium Ripe mangoes

  • 1 tablespoon Lime juice
  • 3 cloves Garlic cloves (minced)
  • 1 teaspoon Ginger (grated)
  • 2 tablespoons Olive oil
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Cilantro (chopped, for garnish)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel and dice the mangoes into small cubes, reserving any excess mango juice.

Step 2

In a medium bowl, whisk together soy sauce, honey, lime juice, garlic, ginger, red chili flakes, salt, and pepper. Stir in half of the diced mango, mashing slightly to release more flavor. Set aside.

Step 3

Season the chicken thighs with a pinch of salt and pepper on both sides.

Heat olive oil in a large skillet over medium heat. Add the chicken thighs and sear for 3-4 minutes on each side until golden brown. Remove the chicken and set it aside.
