Cut the tuna steak into bite-sized chunks and season with salt and black pepper.
Evenly coat the tuna chunks in cornstarch, shaking off any excess.
Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the tuna chunks and pan-sear for 1-2 minutes on each side, until golden and just cooked through. Remove the tuna from the skillet and set aside.
