Ingredients

  • 500 grams Boneless, skinless chicken breast
  • 4 tablespoons Cornstarch
  • 1 large Egg
  • 4 tablespoons Vegetable oil
  • 1 medium (cut into chunks) Red bell pepper
  • 1 medium (cut into chunks) Green bell pepper
  • 1 cup (fresh or canned, drained) Pineapple chunks
  • 1 small (cut into chunks) Onion
  • 2 cloves (minced) Garlic
  • 2 tablespoons Soy sauce
  • 3 tablespoons Ketchup
  • 3 tablespoons Rice vinegar
  • 3 tablespoons Brown sugar
  • 1 cup Water
  • 1 tablespoon Cornstarch (for sauce thickening)
  • 2 tablespoons Water (for cornstarch slurry)

Directions

Step 1

Cut the chicken breasts into bite-sized cubes and set aside.

Step 2

In a medium bowl, whisk together 4 tablespoons of cornstarch and 1 egg until smooth. Add the chicken pieces and coat them evenly in the mixture. Let it sit for 5 minutes.

Step 3

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken pieces and cook until golden and crispy, about 4-5 minutes per side. Remove the chicken and set aside on a plate lined with paper towels.

In the same skillet, add the remaining 2 tablespoons of vegetable oil. Stir-fry the red bell pepper, green bell pepper, onion, and garlic for 2-3 minutes until slightly softened.

Return the cooked chicken to the skillet and toss to coat the chicken evenly with the sauce. Cook for another 2-3 minutes to heat everything through.
