  • 3 tablespoons ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 3 tablespoons water
  • 1 tablespoon vegetable oil
  • 4 cups cooked white rice (optional, for serving)

Directions

Step 1

In a microwave-safe casserole dish, combine the diced red bell pepper, green bell pepper, onion, and minced garlic. Drizzle the vegetable oil over the vegetables and toss to coat evenly.
