Ingredients

  • 1.5 cups jasmine rice
  • 3 cups water
  • 2 tablespoons vegetable oil
  • 1 medium, diced red bell pepper
  • 1 medium, diced green bell pepper
  • 1 large, julienned carrot
  • 1 cup pineapple chunks
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 3 tablespoons brown sugar
  • 3 tablespoons ketchup
  • 2 teaspoons, minced ginger
  • 2 cloves, minced garlic
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 stalks, chopped green onions
  • 1 tablespoon, toasted sesame seeds

Directions

Step 1

Rinse the jasmine rice under cold water until the water runs clear. Combine the rinsed rice with 3 cups of water in a medium saucepan. Bring to a boil over high heat, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the water is absorbed. Fluff the rice with a fork and set aside.

Step 2

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the diced red and green bell peppers and the julienned carrot. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

Step 3

Add the pineapple chunks to the skillet and stir briefly. In a bowl, combine the soy sauce, rice vinegar, brown sugar, ketchup, minced ginger, and minced garlic. Stir well to combine.

Step 4

Pour the sauce mixture into the skillet with the vegetables and pineapple. Stir to coat everything evenly.

Step 5

In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water to form a slurry. Pour the slurry into the skillet and stir continuously until the sauce thickens, about 2 minutes.

Step 6

Add the cooked rice to the skillet and stir well to combine the rice with the sauce and vegetables.

Remove the skillet from heat and sprinkle the chopped green onions and toasted sesame seeds over the dish.
