Ingredients

  • 1 medium-sized head red cabbage
  • 1 large apple
  • 1 medium-sized onion
  • 2 tablespoons butter
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons brown sugar
  • 1 cup water
  • 0.25 teaspoons ground cloves
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Remove the outer leaves from the red cabbage and slice it into thin shreds, discarding the core.

Step 2

Peel and core the apple, then grate or finely dice it.

Step 3

Peel the onion and slice it thinly.

Step 4

In a large pot or Dutch oven, melt the butter over medium heat.

Step 5

Add the sliced onion and sauté for 2-3 minutes, until softened and translucent.

Step 6

Stir in the shredded cabbage and grated apple. Cook for 5 minutes, stirring occasionally, until slightly wilted.

Step 7

Add the apple cider vinegar, brown sugar, water, ground cloves, salt, and black pepper to the pot. Stir well to combine.

Step 8

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 30-40 minutes, stirring occasionally, until the cabbage is tender and the flavors have melded together.

Step 9

Taste and adjust seasoning with additional salt, pepper, or a splash of vinegar if desired.

Step 10

Serve warm as a side dish, or refrigerate and reheat for later. It keeps well and tastes even better the next day!
