  • 500 grams large prawns (shrimp), peeled and deveined

  • 3 tablespoons cornstarch
  • 2 tablespoons all-purpose flour
  • 1 cup vegetable oil (for frying)
  • 1 cup pineapple chunks (canned or fresh)
  • 1 medium red bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 1 small white onion, chopped
  • 3 tablespoons ketchup
  • 3 tablespoons white vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons light brown sugar
  • 0.5 cup water
  • 1 teaspoon cornstarch (for sauce slurry)
  • 2 tablespoons water (for sauce slurry)

Directions

Step 1

In a medium bowl, season the prawns with salt and pepper. Set aside.

Step 2

In a shallow dish, combine 3 tablespoons of cornstarch and 2 tablespoons of all-purpose flour. Dredge each prawn in the mixture to coat evenly. Shake off excess.

Heat a large skillet or wok over medium-high heat and add 1 cup of vegetable oil. Fry the coated prawns in batches until golden and crispy, about 2-3 minutes per side. Remove and place on a plate lined with paper towels to drain excess oil.
