Ingredients

  • 12 oz rotini pasta
  • 1 medium red bell pepper
  • 1 medium yellow bell pepper
  • 0.5 medium red onion
  • 1 small cucumber
  • 1 medium carrot
  • 1.5 cups cherry tomatoes
  • 0.25 cup fresh parsley
  • 1 cup pineapple chunks (canned or fresh)
  • 0.25 cup white vinegar
  • 0.25 cup olive oil
  • 2 tbsp sugar
  • 1 tbsp soy sauce
  • 1 minced garlic clove
  • 0.5 tsp ground black pepper
  • 0.5 tsp salt

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to cool completely, then set aside.

While the pasta is cooling, chop the vegetables. Dice the red and yellow bell peppers, thinly slice the red onion, dice the cucumber, shred the carrot, and halve the cherry tomatoes. Roughly chop the parsley.
