Ingredients

  • 500 grams Chicken breast
  • 2 medium-sized Ripe mango
  • 1 medium-sized Red bell pepper
  • 1 medium-sized Green bell pepper
  • 100 grams Pineapple chunks
  • 2 cloves Garlic cloves
  • 3 tablespoons Cornstarch
  • 3 tablespoons All-purpose flour
  • 2 tablespoons Soy sauce
  • 2 tablespoons White vinegar
  • 3 tablespoons Ketchup
  • 2 tablespoons Brown sugar
  • 150 milliliters Chicken stock
  • 4 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 large Egg

Directions

Step 1

Dice the chicken breast into bite-sized pieces. Season with salt and black pepper. Set aside.

Step 2

In a medium bowl, whisk together the cornstarch, flour, and a beaten egg to form a batter. Coat the chicken pieces evenly in the batter.

Step 3

Peel and dice the mangoes into chunks. Slice the red and green bell peppers into strips and finely chop the garlic cloves.

Step 4

Heat 3 tablespoons of vegetable oil in a large skillet or wok over medium heat. Fry the battered chicken pieces in batches until golden brown and crispy. Remove and set aside on a paper towel-lined plate.

Step 5

In the same skillet, add 1 tablespoon of vegetable oil and sauté the garlic until fragrant, about 30 seconds. Add the bell peppers and pineapple chunks, cooking for another 2-3 minutes until just tender.

Step 6

In a small bowl, combine the soy sauce, white vinegar, ketchup, brown sugar, and chicken stock. Stir well to create the sweet and sour sauce.

Step 7

Pour the sauce mixture into the skillet and bring it to a gentle simmer. Add the mango chunks and stir well to coat them with the sauce.

Step 8

Return the fried chicken pieces to the skillet and toss everything together until the chicken is warmed through and evenly coated with the sauce.

Step 9

Serve hot over steamed rice or noodles for a complete meal. Garnish with additional diced mango or chopped green onions if desired.
