Ingredients

  • 2 medium red onion
  • 2 tablespoons olive oil
  • 3 large garlic cloves
  • 2 medium red chili pepper
  • 2 tablespoons honey
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro
  • 1 medium lime

Directions

Step 1

Peel and finely dice the red onions. Set aside.

Step 2

Heat 2 tablespoons of olive oil in a medium skillet over medium heat.

Step 3

Peel and mince the garlic cloves. Slice the red chili peppers and remove seeds for a milder heat level if desired.

Step 4

Add the diced onions to the skillet and sauté for 5 minutes, stirring occasionally, until they soften and become translucent.

Step 5

Add the minced garlic and sliced red chili peppers to the skillet. Cook for another 2 minutes until fragrant.

Step 6

Stir in the honey, apple cider vinegar, and tomato paste. Mix well to coat the onions evenly.

Step 7

Sprinkle in the smoked paprika, ground cumin, salt, and black pepper. Stir and cook for 2-3 minutes to let the flavors meld together.

Step 8

Remove the skillet from heat and allow the mixture to cool slightly.

Step 9

Transfer the onion mixture to a bowl and add freshly chopped cilantro and the juice of one lime. Stir to combine.

Step 10

Taste and adjust seasoning if needed. For a thinner consistency, you can add a splash of water or more lime juice.

Step 11

Serve warm or at room temperature as a topping, dip, or accompaniment to your favorite dishes.
