Ingredients

  • 2 pounds Beef stew meat
  • 1 large, diced Red bell pepper
  • 1 large, diced Green bell pepper
  • 1 large, diced Yellow onion
  • 1 cup (fresh or canned) Pineapple chunks
  • 1 cup Ketchup
  • 0.25 cup Soy sauce
  • 0.25 cup Honey
  • 0.33 cup White vinegar
  • 3 tablespoons Brown sugar
  • 3 cloves, minced Garlic
  • 1 teaspoon, minced Ginger
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 stalks, sliced for garnish Green onions
  • 4 cups (optional, for serving) Cooked white rice

Directions

Step 1

Prepare the vegetables by dicing the red and green bell peppers and the yellow onion. If using fresh pineapple, cut into bite-sized chunks.

Step 2

In the crock pot, layer the beef stew meat evenly at the bottom. Lightly season it with salt and black pepper.

Step 3

Add the diced bell peppers, onions, and pineapple chunks on top of the beef.

Step 4

In a medium mixing bowl, whisk together the ketchup, soy sauce, honey, white vinegar, brown sugar, minced garlic, and minced ginger until smooth.

Step 5

Pour the sweet and sour sauce mixture evenly over the beef and vegetables in the crock pot.

Step 6

Cover the crock pot with a lid and set it to cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the beef becomes tender and the flavors meld together.

Step 7

About 15 minutes before the cook time is up, mix the cornstarch and water in a small bowl to create a slurry. Stir this into the liquid in the crock pot to thicken the sauce.

Step 8

Allow the crock pot to continue cooking for an additional 10-15 minutes on HIGH until the sauce thickens to your desired consistency.

Step 9

Serve the Sweet and Sour Hawaiian Beef over cooked white rice, if desired, and garnish with sliced green onions.
