Ingredients

  • 3 medium cucumber
  • 0.25 cup white vinegar
  • 2 tablespoons granulated sugar
  • 2 tablespoons water
  • 0.5 teaspoons salt
  • 0.5 teaspoons sesame oil
  • 0.25 teaspoons red chili flakes
  • 1 teaspoon toasted sesame seeds
  • 1 stalk (thinly sliced) green onion

Directions

Step 1

Wash the cucumbers thoroughly, then slice them thinly into rounds, about 1/8-inch thick. If desired, you can use a mandoline slicer for uniform thickness.

Step 2

Place the sliced cucumbers in a bowl and sprinkle with salt. Toss gently to coat. Let them sit for 10 minutes to draw out excess moisture.

Step 3

Meanwhile, in a small mixing bowl, combine the white vinegar, granulated sugar, water, sesame oil, and red chili flakes. Stir until the sugar is completely dissolved to create the sweet and sour dressing.

Step 4

After 10 minutes, drain the cucumber slices and gently pat them dry with a paper towel to remove excess moisture.

Step 5

Transfer the cucumbers to a clean bowl and pour the prepared dressing over them. Toss well to coat all the slices evenly.

Step 6

Sprinkle the toasted sesame seeds and thinly sliced green onions on top for garnish.

Step 7

Refrigerate for at least 10 minutes before serving to allow the flavors to meld. Serve chilled as a refreshing side dish.
