Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Ground black pepper
  • 2 tablespoons Olive oil
  • 2 cups Fresh cranberries
  • 0.33 cup Honey
  • 2 tablespoons Soy sauce
  • 2 tablespoons Apple cider vinegar
  • 2 cloves Garlic cloves, minced
  • 0.5 cup Chicken broth
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Chopped fresh parsley (for garnish)

Directions

Step 1

Season the chicken breasts on both sides with salt and ground black pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the fresh cranberries, honey, soy sauce, apple cider vinegar, garlic, and chicken broth. Stir to combine.

Step 4

Bring the cranberry mixture to a simmer and cook for 5-7 minutes, until the cranberries start to soften and burst.

Step 5

Return the chicken breasts to the skillet, spooning the cranberry sauce over the top. Cover and cook for 12-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 6

In a small bowl, whisk together the cornstarch and water to create a slurry. Stir the slurry into the skillet and cook for an additional 2-3 minutes, until the sauce thickens.

Step 7

Remove the skillet from heat and let the chicken rest for a few minutes. Garnish with chopped fresh parsley before serving.

Step 8

Serve warm with your choice of accompaniment, such as rice, mashed potatoes, or a side of roasted vegetables.
