Ingredients

  • 2 pounds Chicken wings
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 3 tablespoons Cornstarch
  • 3 cups Vegetable oil
  • 0.5 cup Ketchup
  • 0.25 cup Rice vinegar
  • 0.25 cup Brown sugar
  • 2 tablespoons Soy sauce
  • 0.25 cup Pineapple juice
  • 3 tablespoons Water
  • 1 tablespoon Cornstarch (for sauce)
  • 1 tablespoon Sesame seeds (optional, for garnish)
  • 2 tablespoons Green onions (sliced, optional, for garnish)

Directions

Step 1

Pat the chicken wings dry with a paper towel. Place them in a large bowl and season with salt, black pepper, and garlic powder. Toss to coat evenly.

Step 2

Sprinkle 3 tablespoons of cornstarch over the wings and toss until each wing is lightly coated. This will help them crisp up during frying.

Step 3

In a deep skillet or heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). If you don’t have a thermometer, you can test the oil by dropping in a small piece of batter; it should sizzle immediately.

Step 4

Fry the wings in batches, making sure not to overcrowd the pan, for about 8-10 minutes or until golden brown and crispy. Remove the wings with a slotted spoon and place them on a wire rack or a plate lined with paper towels to drain excess oil.

Step 5

While the wings are frying, prepare the sweet and sour sauce. In a medium saucepan, combine ketchup, rice vinegar, brown sugar, soy sauce, and pineapple juice. Bring the mixture to a gentle simmer over medium heat, stirring occasionally.

Step 6

In a small bowl, mix 3 tablespoons of water with 1 tablespoon of cornstarch to create a slurry. Gradually whisk the slurry into the simmering sauce. Cook for 1-2 minutes, or until the sauce thickens to your desired consistency. Remove from heat.

Step 7

Place the fried chicken wings in a large bowl. Pour the sweet and sour sauce over the wings and toss until they are evenly coated.

Step 8

Transfer the coated wings to a serving platter. Garnish with sesame seeds and sliced green onions, if desired.

Step 9

Serve immediately and enjoy your sweet and sour chicken wings!
