Ingredients

  • 500 grams Chicken breast or pork tenderloin
  • 60 grams Cornstarch
  • 60 grams All-purpose flour
  • 2 large Eggs
  • 500 ml Vegetable oil
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 1 medium Yellow onion
  • 200 grams Pineapple chunks
  • 80 ml Ketchup
  • 60 ml Rice vinegar
  • 30 ml Soy sauce
  • 50 grams Brown sugar
  • 100 ml Water
  • 15 grams Cornstarch (for sauce thickening)
  • 30 ml Water (for cornstarch slurry)
  • 2 grams Salt
  • 1 gram Black pepper

Directions

Step 1

Cut the chicken breast or pork tenderloin into bite-sized pieces, approximately 1 inch each, and season lightly with salt and black pepper.

Step 2

In a mixing bowl, combine the cornstarch and all-purpose flour. In a separate bowl, beat the eggs.

Step 3

Coat each piece of meat in the flour mixture, then dip into the beaten eggs, and coat again with the flour mixture to create a thick batter.

Step 4

Heat the vegetable oil in a large skillet or deep fryer to 180°C (350°F). Fry the meat pieces in batches until golden brown and cooked through, about 4-5 minutes per batch. Remove and place on a paper towel-lined plate to drain excess oil.

Step 5

While the meat cooks, dice the red bell pepper, green bell pepper, and yellow onion into similarly sized chunks.

Step 6

In a saucepan, prepare the sweet and sour sauce by combining ketchup, rice vinegar, soy sauce, brown sugar, and water. Bring the mixture to a gentle boil over medium heat.

Step 7

In a small bowl, mix 15 grams of cornstarch with 30 ml of water to create a slurry. Gradually add this slurry to the simmering sauce, stirring constantly, until the sauce thickens. Reduce the heat to low and keep warm.

Step 8

In a separate pan, heat a small amount of oil over medium heat and sauté the diced bell peppers, onion, and pineapple chunks until slightly softened, about 2-3 minutes.

Step 9

Combine the cooked meat, sautéed vegetables, and pineapple chunks in the pan with the sweet and sour sauce, tossing gently to coat everything evenly with the sauce.

Step 10

Serve the sweet and sour chicken or pork hot over steamed rice or noodles, garnished with optional sesame seeds or chopped green onions if desired.
