Ingredients

  • 1 pound Chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Cornstarch
  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 0.5 cup Vegetable oil
  • 1 can (20 oz) Pineapple chunks in juice
  • 0.25 cup Rice vinegar
  • 0.5 cup Ketchup
  • 2 tablespoons Soy sauce
  • 0.25 cup Brown sugar
  • 2 medium Bell peppers (red and green)
  • 1 medium Onion
  • 2 cloves Garlic

Directions

Step 1

Cut the chicken breasts into 1-inch cubes and season with salt and black pepper.

Step 2

In a bowl, mix together cornstarch and flour. In a separate bowl, beat the eggs.

Step 3

Dip each piece of chicken into the beaten eggs, then coat with the flour mixture.

Step 4

Heat the vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces until golden brown and cooked through, about 6-8 minutes. Remove and set aside.

Drain the juice from the canned pineapple into a medium saucepan. Reserve the pineapple chunks.
