Ingredients

  • 4 large fresh beets
  • 2 tablespoons olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon granulated sugar
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Rinse the beets thoroughly under cold water, scrubbing off any dirt. Trim the greens and roots but leave the skins on to prevent the beets from drying out during roasting.

Step 3

Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast in the preheated oven for 40-50 minutes, or until the beets are fork-tender.

Step 4

While the beets are roasting, prepare the sweet and sour glaze. In a small mixing bowl, whisk together the olive oil, apple cider vinegar, honey, sugar, salt, and black pepper until well combined. Set aside.

Step 5

Once the beets have finished roasting, remove them from the oven and carefully unwrap them (caution: they will be hot). Let them cool for 5-10 minutes until you can handle them.

Step 6

Using your hands or a paper towel, gently rub the skins off the beets. The skins should peel away easily. If needed, use a paring knife for any stubborn spots.

Step 7

Slice the peeled beets into wedges or rounds, depending on your preference, and place them in a large mixing bowl.

Step 8

Pour the sweet and sour glaze over the warm beets and toss gently to coat them evenly.

Step 9

Transfer the glazed beets to a serving dish and garnish with fresh parsley, if desired.

Step 10

Serve warm or at room temperature as a side dish or salad topping. Enjoy!
