Ingredients

  • 500 grams Beef sirloin, cubed
  • 300 grams Baby carrots
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Cornstarch
  • 2 tablespoons Vegetable oil
  • 2 cloves Garlic, minced
  • 1 cup Pineapple juice
  • 3 tablespoons Rice vinegar
  • 2 tablespoons Soy sauce
  • 3 tablespoons Ketchup
  • 2 tablespoons Brown sugar
  • 0.5 cup Water
  • 1 tablespoon Cornstarch (for sauce thickening)
  • 2 stalks Green onions, sliced (for garnish)

Directions

Step 1

Season the beef cubes with salt and black pepper. Sprinkle 2 tablespoons of cornstarch over the cubes and toss to coat evenly.

Step 2

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Sear the beef cubes until browned on all sides, about 5-7 minutes. Remove the beef and set it aside on a plate.

Step 3

In the same skillet, add the minced garlic and sauté until fragrant, about 30 seconds.

Step 4

Add the baby carrots to the skillet and sauté for 3-4 minutes until they start to soften slightly.

Step 5

In a small bowl, whisk together the pineapple juice, rice vinegar, soy sauce, ketchup, brown sugar, and 0.5 cup of water to make the sweet and sour sauce.

Step 6

Pour the sauce mixture into the skillet with the carrots. Bring it to a simmer and let it cook for 3 minutes.

Step 7

Dissolve 1 tablespoon of cornstarch in 2 tablespoons of cold water to create a slurry. Slowly stir the slurry into the simmering sauce to thicken it.

Step 8

Return the seared beef cubes to the skillet and toss them in the thickened sauce until well coated. Allow everything to simmer together for 5 minutes.

Step 9

Remove from heat and garnish with sliced green onions before serving.

Step 10

Serve hot over steamed rice or noodles for a complete meal.
