Ingredients

  • 4 cups (or approximately two 15-ounce cans) canned navy beans
  • 1 cup ketchup
  • 3 tablespoons apple cider vinegar
  • 1 cup brown sugar
  • 2 tablespoons yellow mustard
  • 1 medium onion, finely chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Rinse and drain the navy beans if using canned beans. Set them aside.

Step 3

In a large skillet, heat olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

Step 4

In a large mixing bowl, combine the ketchup, apple cider vinegar, brown sugar, mustard, smoked paprika, garlic powder, salt, and black pepper. Mix thoroughly to form the sweet and sour sauce.

Step 5

Add the sautéed onions and navy beans to the mixing bowl. Stir until the beans are evenly coated with the sauce.

Step 6

Transfer the mixture to a greased 9x13-inch baking dish, spreading it out evenly.

Step 7

Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

Step 8

After 45 minutes, remove the foil and bake for an additional 15 minutes to allow the top to caramelize slightly.

Step 9

Remove the baked beans from the oven and let them cool for 5 minutes before serving.

Step 10

Serve warm as a side dish or enjoy it on its own. Store leftovers in an airtight container in the refrigerator for up to 3 days.
