  • 3 pieces medium-sized beets
  • 1 tablespoon olive oil

  • 0.25 teaspoon black pepper
  • 0.5 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 piece garlic clove
  • 1 tablespoon fresh dill

Directions

Step 1

Preheat your oven to 400°F (200°C).

Rinse the beets under cold water and pat them dry with a paper towel.

Wrap each beet individually with aluminum foil and place them on a baking sheet.

Roast the beets in the preheated oven for about 45 minutes or until they are fork-tender.
