Ingredients

  • 200 grams Granulated sugar
  • 120 ml Light corn syrup
  • 60 ml Water
  • 50 grams Unsalted butter
  • 150 grams Slivered almonds
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt

Directions

Step 1

Prepare a baking sheet by lining it with parchment paper or a silicone baking mat. Set aside.

Step 2

In a medium-sized heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, and water. Stir to dissolve the sugar and place the pan over medium heat.

Step 3

Bring the mixture to a boil, stirring occasionally, until the sugar is completely melted.

Step 4

Clip a candy thermometer to the side of the pan, ensuring the bulb is submerged in the mixture but not touching the bottom.

Step 5

Allow the mixture to cook undisturbed until it reaches 150°C (300°F), the hard crack stage. This will take about 10-12 minutes. Watch it carefully as it can burn quickly.

Once the mixture reaches the desired temperature, remove the saucepan from the heat.
