Ingredients

  • 1 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 1 Egg yolk
  • 1 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.25 cup Large-grain sparkling sugar (for decorating, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a mixing bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy, about 2-3 minutes using a hand mixer or stand mixer.

Step 3

Add the egg yolk and vanilla extract to the butter mixture and beat until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until a soft, cohesive dough forms. Do not overmix.

Step 6

Roll the dough into 1-inch balls using your hands. Place them at least 2 inches apart on the prepared baking sheets.

Step 7

Optional: Roll the dough balls in large-grain sparkling sugar for added sweetness and texture before placing them on the baking sheets.

Step 8

Using the bottom of a flat glass or your palm, gently press each ball down to flatten slightly.

Step 9

Bake in the preheated oven for 10-12 minutes, or until the edges just start to turn golden. Be careful not to overbake, as these cookies should remain soft inside.

Step 10

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Step 11

Serve the cookies plain or with a dusting of powdered sugar, and enjoy!
