Once the rye flour is incorporated, begin adding the all-purpose flour, half a cup at a time, until the dough starts to come together. It should be soft but not overly sticky.
Turn the dough out onto a lightly floured surface and knead by hand for about 8–10 minutes, or continue mixing with the dough hook for 6–8 minutes, until the dough is smooth and elastic.
