Ingredients

  • 1 4-5 pounds Whole chicken
  • 4 tablespoons Unsalted butter, softened

  • 2 teaspoons Fresh thyme, minced
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 medium Apples, peeled, cored, and diced
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Ground allspice
  • 1.5 cups Rice (uncooked)
  • 3 cups Chicken broth
  • 1 medium Yellow onion, finely diced
  • 0.5 cup Raisins (optional)
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Pat the chicken dry with paper towels and remove any giblets from the cavity.

Step 3

In a small bowl, mix the softened butter, minced garlic, fresh thyme, salt, and black pepper to create a herb butter.

Gently lift the skin of the chicken breast and rub half of the herb butter underneath the skin. Rub the remaining butter all over the chicken skin.
